The glass, the temperature, the grape\u2019s history&#8230; all these ingredients are necessary for the moment to be fully lived.<br \/>\nThat&#8217;s why I\u2019m very much committed to meet the producers, to taste and to listen to the history of the terroirs and the vineyards. My quest? To pick up the best, the t\u00eates de cuv\u00e9e and the rare finds worth to be known. Outstanding products, resulting from a demanding and passionate winemaking work, both in the use of grape varieties and in the winemaking process.<br \/>\nThe restaurant&#8217;s cellar now contains over 200 wines, each selected with particular care for the subtlety of the aromas and the balanced complexity of the fruit.<br \/>\nSharing, friendliness, and exchange, this is what I believe are the features of the magic of wine. Le verre, la temp\u00e9rature, l\u2019histoire du raisin\u2026 tous ces ingr\u00e9dients sont n\u00e9cessaires pour que le moment soit v\u00e9cu pleinement.<\/p>\n<p>Aussi, je suis tr\u00e8s attach\u00e9e \u00e0 aller \u00e0 la rencontre des producteurs, \u00e0 go\u00fbter et \u00e0 \u00e9couter l\u2019histoire des terroirs et des vignes. Ma qu\u00eate ? D\u00e9nicher les \u00e9lites, les t\u00eates de cuv\u00e9e et les p\u00e9pites qui gagnent \u00e0 \u00eatre connues. Les produits d\u2019exception, r\u00e9sultats d\u2019un travail vigneron exigeant et passionn\u00e9, \u00e0 la fois dans l\u2019exploitation des c\u00e9pages et dans le processus de vinification.<\/p>\n<p>C\u2019est aujourd\u2019hui plus de 200 r\u00e9f\u00e9rences qui composent la cave du restaurant, chacune s\u00e9lectionn\u00e9e avec un soin tout particulier quant \u00e0 la subtilit\u00e9 des ar\u00f4mes, et \u00e0 la complexit\u00e9 \u00e9quilibr\u00e9e autour du fruit.<\/p>\n<p>Partage, convivialit\u00e9 et \u00e9change, voil\u00e0 ce qui caract\u00e9rise selon moi la magie qui s\u2019op\u00e8re autour du vin.
