Dedicated to craftsmanship and simplicity, we have worked with several local artists and known building professionals to conceive, develop and decorate the restaurant. This short chain approach illustrates the village of Tusson’s spirit where Le Compostelle has launched.

Once an event venue, whose influence stretched as far as Spain, located on the road to Saint Jacques de Compostelle, Tusson has retained all its charm and many beautiful old houses, such as Marguerite d’Angoulême’s home.

With its 16th-century, raw wooden beams and steel fireplace, Le Compostelle has been designed to blend the charm of the past with contemporary design. An overall aesthetic atmosphere intended to be natural and warm.
During summer, from the terrace, you can enjoy a clear view to the Tuscan tunes, dotted with olive trees and cypresses.

SOME LOCAL PRODUCERS

With Maison de Charente, it’s a collaboration of more than 20 years. Specialising in duck and foie gras, this long-standing partner of Compostelle supports free-range farming and GMO-free food, in respect of traditions. Presently, together we create new products, such as duck minced steak, exclusively designed for the restaurant, around taste, texture and best cooking. We share the same passion and commitment to high-quality products.

Offering 100% organic farming products, the ferme de Chassagne makes all its products using its own seeds. We source ourselves with cereals, flour, bread and pulses from there. In particular, we can find heritage flour and farmhouse bread. All the products are made on the premises, from the sown cereal seed to the baked brioche. It’s a greatly appreciable reliability and above all a promise of quality.

This family-run business, specialised in cattle breeding and cheese production, supplies us mainly with dairy products. Fresh milk, raw butter, a varied range of cheese (fresh or tomme), yoghurts… we appreciate the great expertise and friendliness that prevails in this human-sized structure. It has the all-countryside spirit, with animals raised in the open air.
